Greek Salad

Ingredients

  • 1 head of iceberg lettuce
  • 1/2 English cucumber (Sliced in cubes)
  • 1/4 cup purple onion (Finely sliced)
  • 1/2 sliced or whole black olives
  • 1/2 cup chopped feta cheese
  • 1/2 cup cherry tomatoes
  • 1/2 cup extra virgin olive oil
  • 1/4 cup lemon juice (about 1 large lemon)
  • 3 tablespoons white vinegar
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon dried oregano
  • 1 teaspoon sugar
  • small salt & pepper to taste

Directions

Step 1
Rip lettuce into bite size pieces and rinse well in salad spinner. Place into large bowl combine cucumber, onions, cherry tomatoes. Toss in olives and feta cheese.
Step 2
Dressing
Combine oil, lemon juice, vinegar, sugar and spices. Mix well and drizzle lightly over salad and toss. Serve immediately.
