Italian Meatballs

Ingredients

  • 1/4 cup milk
  • 1/4 cup bread crumbs
  • 3 tablespoons grated parmesan cheese
  • 1lb lean ground beef
  • 1/3 cup finely diced white onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cloves garlic finely chopped
  • 1/4 cup finely diced parsley
  • dash hot sauce
  • 1/4 teaspoon italian seasoning (or to taste)
  • 1 egg
  • 3 or 4 cups marinara sauce ( 'Big Batch Marinara' recipe or store bought)

Directions

Step 1
Preheat oven to 400 degrees. Cover a cookie sheet with parchment paper.

You can start the marinara sauce in a med to large size pot and pot on a low simmer while you prepare the meatballs. You will be adding the cooked meatballs into this sauce so keep this in mind when you select your pot.
Step 2
Heat oil in a fry pan and lightly cook the onions until just translucent.
Step 3
Combine bread crumbs, milk and parmesan in small bowl and let set for about 10 minutes while preparing meat mixture. It will expand into a paste that you will add to the meatball mixture later.
Step 4
Combine meat, cooked onions, garlic, parsley, italian seasonings, salt, pepper hot sauce, and egg. Mix well with a spatula to ensure it all combined.
Step 5
Add the bread mixture and blend well. I use my hands to blend the mixture at this point. Once well blended you can roll into balls to bake in the oven.
Step 6
Form meatballs into about 1 to 1 1/2 inch balls and place evenly spread on the cookie sheet. Place in the oven for about 15 minutes, turning half way through the cooking time.

Step 7
Remove meatballs from the oven and place them on a paper towel to absorb any excess grease, and then transfer them into the warmed marinara sauce. Cook for a couple of hours on a low simmer so meatballs can absorb the flavour of the sauces.

Serve over hot pasta and sprinkle with parmesan.

Let the meatballs gently simmer for about an hour or two and then serve over cooked pasta.
