Lemon Mushroom Chicken

Ingredients

  • 4 boneless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 2 cloves of garlic finely chopped
  • 1 teaspoon freshly chopped parsley
  • salt & pepper to taste
  • 2 cups sliced cremini or white mushrooms
  • 2 tablespoons butter
  • 2 cups chicken broth
  • 1 heaped tablespoon flour

Note

This recipe goes great with new pototoes and fresh green beans.

Directions

Step 1
Preheat oven to 350 degrees.

I always start this recipe by tenderizing the chicken breasts by pounding with a meat mallet between two sheets of wax paper. Remove the wax paper and lightly rinse to make sure there are no paper pieces sticking to the chicken.
Step 2
Add the olive oil and half of the garlic to a non stick fry pan and bring to medium heat. Place the chicken breast in evenly and sprinkle with salt and pepper to taste on both sides. Allow the chicken to cook through on both sides turning regularly until no longer pink but not well done.
Step 3
Slice lemon into 4 or so wedges and remove any seeds. Squeeze the lemon juice from the wedges onto chicken in then pan and flip them over so well coated. You can adjust the amount of lemon as per you taste and depending on the size of the lemon. I usually just make sure all piece have at least one spritz. Let it simmer for a couple of minutes and sprinkle with the parsley flipping the pieces again to get coated. Transfer chicken pieces to baking dish making sure to leave some of the oils and lemon juice in the pan for you next step. Set chicken aside for now.
Step 4
Add butter and remaining garlic to existing pan and allow to melt on medium heat. Add sliced mushrooms and mix well with the oils and juices left in pan. Allow to cook until softened.
Step 5
Sprinkle in flour and toss to coat the mushrooms.
Step 6
Pour in 1 cup of chicken broth and using a whisk continously stir until well blended to ensure you don't get any lumps. Bring up to a medium boil and continue stirring until it begins to slightly thicken and then add remaining broth and stir well.
Step 7
Pour the mushroom gravy mixture over top of the chicken and place in oven for about 20 minutes. Remove from oven and serve immediately.
