Orange Marmalade Chicken

  • 4 boneless chicken breasts
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon paprika
  • 3 tablespoons butter
  • 3 tablespoons orange marmalade
  • 1/2 teaspoon cinnamon
  • 1 1/2 cup orange juice


This is a recipe I found back in the 1980’s  and I have adapted it with slightly different ingredients. It’s a lightly sweet and tasty chicken and goes great with Noodles Romanoff (see recipe in Pasta Dishes) and green beans. This recipe is for 4 but can increase depending on number of guests.



Step 1
Preheat oven to 350 degrees.

Step 2
Place chicken between 2 sheets of wax paper and pound evenly with a meat mallete.
Step 3
Combine flour, salt, pepper and paprika in a plastic bag. Shake chicken in bag to be lightly dusted. Save remaining flour mixture.

Step 4
Add 2 tablespoons butter to fry pan and heat on medium high heat until melted. Add chicken pieces and cooked until browned lightly on both sides. Remove chicken and place in glass lasagna pan.

Step 5
Add remaining flour and 1 tablespoon of butter to fry pan and use whisk to capture brown bits left by chicken. Add marmalade and cinnamon and mix well. Add orange juice and blend with whisk until smooth.

Step 6
Pour mixture over top of chicken and cook in oven for about 20 minutes or until bubbling.
