Jalapeno Oven BBQ Chicken

Ingredients

  • 1 roasting chicken (* can also use separate chicken pieces)
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon lemon juice OR white wine vinegar
  • 2 large green onions chopped
  • 1 large jalepeno pepper chopped seeds removed (* you can add an extra if you prefer it to be hotter)
  • 3 tablespoons fresh chopped parsley
  • 1 teaspoon Montreal Steak spice
  • 1/4 teaspoon chilli pepper flakes
  • salt & pepper to taste
  • 1/4 cup your favourite prepared BBQ sauce (optional )

Note

This chicken calls for a somewhat spicy marinade that makes incredibly tender chicken with just a bit of heat. You can use this marinade on whole flattened chickens, chicken pieces or wings.  You can choose to just oven cook this recipe or you can finish on the grill if you want it to be a bit crispier. The recipe I have outlined should be good for about 4 to 6 people.

Directions

Step 1
First off if you are using a fresh jalapeno you need to chop up to prep for the marinade. Remove the top stem and cut the pepper in half lenghwise. Remove the inner light pieces and seeds. Chop into smaller pieces and put on food processor. You can increase the heat on this recipe by increasing the jalapenos.

Next combine the oil, garlic, green onion, parsley, lemon juice (or vinegar), spices, salt and pepper and also add to food processor. Blend all ingredients until they become a relatively fine but still somewhat chunky paste. Set aside.

Step 2
Prepare chicken by cutting off any visible fat or extra skin. You may want to leave some skin on to maintain the crispiness of chicken when cooked. Transfer chicken pieces to a large bowl and pour in marinade paste. Stir thoroughly to evenly coat chicken.

Once coated transfer chicken into a zip lock bag or a glass bowl. Cover and place in fridge and marinade overnight (ideally), or for at least 2 hours.

Step 3
Preheat oven to 350 degrees. Remove chicken from bowl or bag and place into a large roasting pan and cook for 45 minutes to an hour or until juices run clear.

Remove from the oven and - if you choose - lightly brush bbq sauce all over chicken. Return to oven uncovered OR place on pre heated grill to finish up to make the skin crisp and become golden.

Remove from oven, cover and let sit for about 5 or 10 minutes prior to serving.
