Zucchini Tomato Toss

- 2 medium sized zuchinnis
- 1 white onion
- 1 cup cherry tomatos (or 2 or 3 ripe tomotoes)
- 2 tablespoons lemon juice
- 1 teaspoon ground black pepper
- 3 tablespoons parmesan cheese (optional - but tastes good!)
|Preheat oven to 350 degrees. |
Lightly grease cassarole dish.
Slice zucchini and onions and place into dish.
|Add in the cherry tomatoes and they can be left whole or chopped in half if fairly large.|
|Sprinkle with lemon juice and pepper and stir to cover vegetables.|
|If using cheese, sprinkle parmesan over vegetable mixture. Cover with foil or lid and let cook for about 30 minutes. I usually take the lid off for about the last 5 minutes or so as it slightly thickens the sauce created. Remove from oven and serve.|
