Banana Bread

Banana Bread

Serves 6 to 8
Prep time 20 minutes
Cook time 50 minutes
Total time 1 hours, 10 minutes

Ingredients

  • 1 3/4 cup all purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/3 cup butter or margarine
  • 2 or 3 very ripe mashed bananas ((about a cup or so))
  • 2/3 cups sugar
  • 2 eggs

Note

This is a recipe from my Mom's old cook book that I pretty much follow to the letter. You can add nuts or chocolate chips if you like.

Directions

Step 1
Preheat oven to 350 degrees.

Combine flour, baking powder, soda and salt and sift together.
Step 2
In a separate bowl beat the butter until light and fluffy. I just use a fork or a whisk but you can use a mixer if you prefer.
Step 3
Add sugar to butter and beat until light and fluffy.
Step 4
Add eggs one at a time and mix until well blended.
Step 5
To mash the bananas you basically chop or break up the bananas into a bowl and mash them until they are fairly well softened but can also remain a little bit chunky.

Fold the mashed bananas into the egg and sugar mixture and blend with a fork or spoon.
Step 6
Add the flour mixture into the banana mixture in four separate portions and mix well after each addition.
Step 7
Once blended well you can turn the ingrediants into a well greased loaf pan ( 8" x 4" x 2.5").

Bake for about 50 minutes or until it is golden brown. You should be able to insert a fork or tooth pick and it remains dry. Enjoy!
