Butter Tart Squares

- 1/2 cup butter or margarine
- 1/4 cup sugar
- 1 cup flour
- 1/8 teaspoon salt
- 1/4 cup butter
- 1 cup brown sugar
- 2 eggs
- 1/4 cup corn syrup
- dash cinnamon
- 1 teaspoon vanilla
- 1 teaspoon white vinegar
- 1 teaspoon flour
- 1/2 teaspoon baking powder
- 1/2 cup raisins
|Preheat oven to 350 degrees. |
When making butter tarts or squares I always prep the raisins first. To plump up the raisins so they are not as dry I place them in glass measuring cup or bowl and pour boiling water over them until they are fully covered. Let them sit in the water for about 10 minutes then drain completely and set aside.

Combine the 1/2 cup butter and 1/4 cup sugar into a bowl and mix with a hand blender until fluffy. Add in the flour and salt and blend well until it forms into a dough. Grease a 9 x 13 inch pan evenly butter or margarine so the dough will not stick. Flatten the dough into pan and press evenly until it covers the bottom.
Place the pan into the oven for about 15 minutes or until lightly golden brown. Remove from oven and set aside.
Combine the 1/4 cup butter or margarine with brown sugar. Mix together until fluffy. Add in eggs, corn syrup, vanilla, vinegar, cinnamon, flour, baking powder and salt and mix well.
|Sprinkle the raisins evenly on to the shortbread based. Pour the prepared filling over top.|
|Place into oven and bake for about 20 to 25 minutes or until filling appears set. Remove from oven and let cool on wire rack and set. Before slicing it is probably best to put them in the fridge to cool completely. Makes about 20 squares.|
