Shrimp & Scallops in Garlic Wine Sauce

Ingredients

  • 1/2lb raw shrimp
  • 1/2lb raw scallops
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon butter
  • 1/2 cup chopped shallots
  • 3 or 4 cloves chopped garlic
  • 1/2 cup white wine
  • 1/2 cup chopped tomatoes
  • 1 teaspoon chopped fresh parsley
  • 1/4 cup light cream

Directions

Step 1
Add olive oil and butter into a large non stick frying pan. Heat to medium. Add the garlic and shallots and let simmer until slightly transparent.
Step 2
Add the wine and bring to a light boil. Allow the wine to be absorbed into onion and garlic and allow to simmer for a couple of minutes.
Step 3
Add the shrimp and scallops and allow to cook until shrimp are just pink and scallops are opaque. Add in tomotoes, cream and parsley.

Serve immediately over spaghetti or linguine pasta. Sprinke with parmesan.
