Slow Cooked Beef Short Ribs

This is a very flavourful tustic kind of dish that takes a while to cook but is well work the prep time. Nice on a cold night or when you are just craving some comfort food. Goes well with a side of mashed potatoes or crusty bread.

Ingredients

  • 4 to 6 pieces of beef short rib bone in
  • 2 or 3 tablespoons extra virgin olive oil
  • 3 or 4 cloves of garlic finely chopped
  • 1 large white onion coursely chopped
  • 2 large carrots coursely chopped
  • 1 1/4 cup red wine
  • 1 stalk of celery chopped
  • 1 cup chopped tomatoes (can use canned or 1 medium tomato chopped)
  • 3 or 4 cups beef broth
  • 3 dried bay leaves
  • 2 tablespoons tomato paste
  • salt & pepper to taste

Note

Directions

Step 1
Preheat oven to 325 degrees.

Add about half of the oil to a large deep pot and heat to medium heat. Place the beef ribs into the pot and lightly brown the meat on both sides for about 4 minutes per side. Remove and place into a roasting pan. Season with salt and pepper.
Step 2
Add remaining oil to the large pot and add the onions, garlic, celery, and carrots and cook until slightly softened. Add red white and bring to a very light boil for about 8 to 10 minutes.
Step 3
Add tomato paste, tomatoes, beef broth, and bay leaves and allow to simmer again for about 4 or 5 minutes.
Step 4
Pour mixture over beef ribs in roasting pan and cover. Place into oven and allow to cook for about 2 to 3 hours. You can check about once an hour or so to lightly mix the ingredients to ensure it has enough liquid covering the meat.
Step 5
Once complete you can remove from the oven and let it sit for about 10 minutes or so and the serve.
