Spicy Beans & Rice

Spicy Rice with Beans

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon chopped garlic
  • 2 cups uncooked rice (white or brown )
  • 1 cup chopped onion
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chilli powder
  • 3 cups chicken or vegetable broth
  • 1/2 cup tomato juice or strained tomatoes
  • 1 cup black beans (can used canned)
  • 1/2 cup corn

Note

This goes nice with any Mexican type dish - like enchiladas! It is also makes a nice vegetarian dish - if you use veggie broth.

Directions

Step 1
Add oil and garlic to large deep fry pan and bring to medium heat. Add onion and stir in to mix well with garlic. Cook onion until just transparent.
Step 2
Add in uncooked rice and stir into onion mixture until the rice becomes slightly puffed. Add cumin and chilli powder and mix well.
Step 3
Pour in broth, tomato juice, beans and corn and stir into rice mixture. Cover and bring to a light boil, then turn down to low to simmer for about 20 to 25 minutes until liquid is absorbed. Let stand and fluff with fork. Can serve immediately or reheat.
