Four Cheese Mac & Cheese

Classic Mac & Cheese

  • 3 tablespoons butter or margarine
  • 1 /2 cup finely minced onions
  • 3 tablespoons flour
  • 1 pinch cayenne pepper
  • salt & pepper to taste
  • 3 cups milk
  • 1/2 cup parmesean cheese
  • 3 tablespoons extra old nippy cheddar
  • 1 cup grated cheddar
  • 1/2 cup swiss cheese (you can subsitute this out for whatever other cheese you like)
  • 2 cups uncooked macaroni
  • 1/2 cup chopped cherry tomatoes (optional)
  • 1/2 cup diced ham (optional )
  • 1/2 cup bread crumbs
  • 1 tablespoon parmesean cheese
  • salt & pepper to taste


Step 1
Preheat oven to 350.

Put a large pot of water on to boil and cook macaroni according to package directions. Once they are cooked they should be drained and put back into the large pot.

Add 1 tablespoon of butter and 1 teaspoon of chopped garlic. Mix into pasta and set aside.
Step 2
In a separate medium sized sauce pan add 3 tablespoons butter and bring to medium heat. Once melted add onions and cook until slighly transparent but not browned. Add in cayenne, salt and pepper. Mix well.
Step 3
Add in approximately 3 tablespoons of flour to onion mixture and mix well with whisk. It should be like a paste but not too thick. Add in one cup of milk and stir continuously with your whisk to ensure the sauce is smooth. Add in parmesan and old cheddar and continue stirring. The sauce will continue thickening so continue to add in milk after each addition.

The sauce once done should not be really thick and about the consistency of a cream soup. If the sauce seems too thick you can always add more milk to reach the right consistency.
Step 4
Once the sauce in done you can pour into your prepared macaroni. Add in diced ham and tomatoes. Can omit the ham for vegetarian version.
Step 5
Grate remaining cheeses and toss together. Pour half of the macaroni mixture into a pre-greased casserole dish. Top with about one cup of the grated cheeses. Pour remining mixture on top of grated cheese.

Step 6
For topping you can melt 1 tablespoon of butter in small dish. Add bread crumbs and 1 tablespoon of parmesean, and salt and pepper to taste. Mix together. Sprinkle bread crumb topping evenly over the top of the cassarole.

Cover with foil and place into oven and cook for about 35 minutes. Take off cover and cook for about 5 to 10 more minutes or until bubling.

Remove from oven and let set for about 5 minutes and then serve.
