Creamy Coleslaw


  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/4 cup finely chopped purple onion
  • 1/4 cup light mayonnaise
  • 1/4 cup light sour cream
  • 2 tablespoons white sugar
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon dijon mustard
  • salt & pepper to taste


Step 1
Combine cabbage, carrots and onions in bowl and toss together.
Step 2
For dressing combine mayonaisse, sour cream, vinegar, sugar, mustard, salt and pepper and stir until well mixed. Pour into cabbage mixture and toss until well coated.

It tastes best if you then cover and refrigerate for up to an hour so the flavours can blend and soften the cabbage mixture.
