Lemon Roasted Potatoes


  • 1lb potatoes
  • 1/3 cup extra virgin olive oil
  • 3 cloves finely chopped garlic
  • 1/3 cup lemon juice
  • 1/3 cup chicken or vegetable broth
  • 2 teaspoons chopped fresh parsley
  • 1 teaspoon chopped fresh oregano (or 1/2 teaspoon dried)
  • salt & pepper to taste


Step 1
Preheat oven to 400 degrees.

Wash and peel pototoes and cut into quarters. If using new or white pototoes you may choose to leave on the skins. Put into roasting pan.

Step 2
Combine oil, lemon juice, broth, garlic and spices and blend well. Pour over potatoes in pan and stir to coat them.
Step 3
Place into the oven uncovered and cook for approximately 1 hour or until the pototoes are cooked through. Turn the pototoes throughout the cooking time and to ensure they get evenly browned.
