Chicken, Spinach & Sun-dried Tomato Pasta


  • 2 boneless chicken breasts (sliced thinly)
  • 2 cloves finely chopped garlic
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup chopped white onion
  • 1/2 bunch fresh spinach
  • 2 pieces sundried tomatoes (chopped finely)
  • 3 cups marinara sauce (see recipe in 'Pasta' or use store bought)
  • 3 tablespoons light cream (this is optional)
  • your favourite pasta


This sauce comes together really quickly and is best to prepare to serve immediately once it is done.  I usually put a large pot of water on for the pasta just before starting so the pasta and sauce can be ready around the same time. I usually serve this with fettuccini  but you can pick your favourite pasta. This recipe should feed 4 so base your amount of pasta on this amount.


Step 1
Start by poaching the chicken. I cook the boneless chicken for pasta this way because is lower in fat and stays very moist.

Add a couple cups of water to a fry pan and add some salt as desired. Add the sliced bite size pieces of chicken to the water and bring it to a medium high heat. Cook until the chicken turns white and no longer appears pink, drain and then set aside.
Step 2
Add the garlic, onion and olive olive to a large fry pan and cook gently until the onions are transparent. Add spinach and toss gently until it starts to wilt somewhat as it heats up.
Step 3
Add one cup of marinara and toss evenly with spinach mixture. Add the chopped sun dried tomatoes and remaining sauce.
Step 4
Add cream and blend until even. Toss in the chicken and mix evenly into the mixture and leave on low heat until the pasta is ready. I usually let the chicken heat through for at least 5 minutes to absorb the sauce and thoroughly heat up again.
Step 5
Once the pasta is ready you can add directly into the prepared sauce. I usually toss the estimated amount of the number of servings into the pan and toss so the pasta is very evenly coated. I tend to leave it heavier on the sauce as opposed to too much pasta.
Step 6
Toss with parmesan if you like and serve immediately.
