Mandarin Salad with Toasted Almonds


  • 1 head romaine lettuce
  • 1 cup chopped english cucumber
  • 1/2 cup chopped celery
  • 1 can mandarin oranges (10 ounce size)
  • 1/3 to 1/2 cup Sliced almonds (or pecans)
  • 1 teaspoon extra virgin olive oil
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cayanne pepper
  • salt & pepper to taste


Step 1
Rip lettuce into bite size pieces and rinse well in salad spinner. Place into large bowl and add cucumber, onions, and celery.
Step 2
Meanwhile warm a heavy skillet to medium high. Add oil and brown sugar and blend well. Mix in sliced almonds (or pecans) salt and pepper and cayenne if using. Continue to toss almonds until well browned and coated with brown sugar. About 5 to 10 minutes. Transfer to single layer on a piece of wax paper to allow them to dry. These can be tossed into the salad upon serving or served on the side and added in as desired.

Toss with a Sweet vinegrette dressing.
