Butter Tarts


  • 1/3 cup soft butter
  • 1/2 cup firmly packed brown sugar
  • 1 tart shells
  • 1 dash cinnamon
  • 2 eggs slightly beaten
  • 1 teaspoon vanilla
  • 1 teaspoon white vinegar
  • 1 cup corn syrup
  • 1/8 teaspoon salt


Step 1
Preheat oven to 400 degrees.

Put raisins into a bowl and pour boiling water over them . Let them sit for about 10 minutes and then drain and dry them and put them aside.
Step 2
For filling I usually mix this in a 6 or 8 cup measuring cup so it is easy to pour into the tart shells. Add butter, sugar, corn syrup and salt and blend with a whisk. Once blended stir in beaten eggs, vanilla, vinegar and cinnamon.
Step 3
Place tart shells on a foil lined cookie sheet and space them evenly. Sprinkle about a teaspoon of raisins into each tart shell.
Step 4
Pour the blended mixture into each tart until shells are about 2/3 full.
Step 5
Place tarts in the oven and cook at 400 degrees for 10 minutes. Reduce heat to 350 degrees for about 5 or 10 minutes more or until the pastry is golden brown.
