Orange Marmalade Chicken

  • 4 boneless chicken breasts
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon paprika
  • 3 tablespoons butter
  • 3 tablespoons orange marmalade
  • 1/2 teaspoon cinnamon
  • 1 1/2 cup orange juice
  • teaspoon orange zest


This is a recipe I found back in the 1980’s  and I have adapted it with slightly different ingredients. It’s a lightly sweet and tasty chicken and goes great with rice and green beans. This recipe is for 4 but can increase depending on number of guests.



Step 1
Preheat oven to 350 degrees.

Step 2
Place chicken between 2 sheets of wax paper and pound evenly with a meat mallete.
Step 3
Combine flour, salt, pepper and paprika in a plastic bag. Shake chicken in bag to be lightly dusted. Save remaining flour mixture.

Step 4
Add 2 tablespoons butter to fry pan and heat on medium high heat until melted. Add chicken pieces to pan and cook evenly until slightly browned on both sides. Transfer chicken pieces in a single layer into a casserole pan and set aside.

Step 5
Add remaining tablespoon of butter to fry pan and about 2 tablespoons of flour. Whisk flour and butter to capture brown bits left by chicken. Add marmalade and cinnamon and whisk well to ensure there are no lumps. Add in orange juice and orange zest and blend with whisk until smooth.

Step 6
Pour orange mixture over top of chicken and transfer dish to oven to bake uncovered for about 20 to 30 minutes or until bubbling. Remove and let sit for about 5 minutes. Serve with rice or chosen side dish.
