Zucchini Tomato Toss

  • 2 medium sized zuchinnis
  • 1 white onion (finely sliced)
  • 1 cup cherry tomatos (or 2 or 3 ripe tomotoes)
  • 2 tablespoons lemon juice
  • 1 teaspoon ground black pepper (or to taste)
  • 3 tablespoons parmesan cheese (or can adjust to taste if you want more or less)


Step 1
Preheat oven to 350 degrees and lightly grease casserole dish.
Step 2
Slice zucchini and onions in even slices and arrange into baking dish.
Step 3
Slice tomatoes into even pieces and add to baking dish. Mix evenly with zucchini and onion mixture.
Step 4
Drizzle lemon juice evenly over vegetable mix and add fresh ground pepper to finish. Stir mixture to ensure pepper and lemon is evenly mixed.
Step 5
Finish by sprinkling grated parmesan evenly over vegetable mixture. Cover with foil or lid and let cook for about 30 minutes. Take the lid off for about the last 5 minutes or so as it slightly thickens the sauce created. Remove from oven and serve.
