Stuffed Pork Tenderloin

Stuffed Pork Tenderloin

Serves 4 to 6

  • 2 pork tenderloins (about 1 lb each)
  • salt & pepper to taste
  • 1 Medium onion chopped
  • 1 stalk of celery chopped
  • 1 cup sliced mushrooms
  • 1/2 teaspoon poultry seasoning
  • 1 cup chopped bread
  • 2 tablespoons butter or margarine
  • salt & pepper to taste
  • 1/2 cup chicken broth
  • 1 tablespoon extra virgin olive oil


This recipe goes nicely with some warm homemade applesauce that I bake along side the tenderloins in the oven. Simple peel and slice a couple of apples and season with a bit of cinnamon and a small amount of brown sugar (if you want sugar). Place in a ovenproof dish and cook for about the same time as the meat. Remove from the oven and mash with a fork. Serve along side the tenderloin.


Step 1
Preheat oven to 350 degrees.

Place tenderloins on a piece of wax paper and slice about half way through lenghwise to open up flat to prep for stuffing.

Place another piece of wax paper on top and pound meat with a meat tenderizer. Remove top piece of wax paper and season meat with salt and pepper to taste.
Step 2
Meanwhile add butter or margarine to a heated fry pan. Once melted add the onions and cook for a couple of minutes until softened. Add mushrooms and celery and mix well cooking for about 5 for minutes or until alll vegetables are softened. Add poultry seasoning and additional salt and pepper if desired.
Step 3
Fold in bread cubes and toss to coat with mixture. I use a small amount of bread with this recipe and concentrate on more vegetables for the stuffing but you can increase the bread if you choose. Fold in the chicken broth and mix well until all bread is well coated.
Step 4
Place the stuffing mixture evenly over the middle of each of the pork tenderloins.
Step 5
You now need to roll the tenderloin length wise like a jelly roll to create a long cylinder shape.

I use the wax paper from underneath to guide the top layer over and help roll the tenderloin. Once rolled you can secure with either cooking twine or a skewer to ensure the meat maintains its shape while cooking.
Step 6
Once the tenderloins are prepped you can place them into a roasting pan. Because these are pretty lean you can add a small amount of oil olive and season with salt and pepper. Place the roasting pan into the oven uncovered and cook for about 45 to 1 hour until they are sligthly browned and the tenderloins are no longer pink inside. You don't want to overcook these as they can become quite tough.
Step 7
Once these are done you can let them set for about 10 minutes on a cutting board to settle. Plus they will be very hot for cutting with the stuffing. Remove the twine or skewers and slice into even sections for servings.
